A trip to southern Italy and the Big Dig:
Veal Involtini – stuffed little rolls of veal:
In Messina, Sicily, you will find involtini stuffed with what is called “molica condita,” a combination of dry fresh breadcrumbs, fresh parsley, grated Pecorino Romano cheese, caciocavallo or provolone cheese, garlic, salt and pepper. Four are skewered onto a stick then baked. Served with Verdura al Forno: Italian Roasted Vegetables tossed in herby olive oil and roasted until perfectly tender and caramelized and potatoes au gratin
Sicilian Spiced Duck with preserved Orange: Duck is really more like steak than chicken. Fragrant orange and Moroccan spices found all around the Mediterranean aromatize the air. Crispy skin and tangy saltiness add to the experience.
Served with a side of: roasted beets and carrots, and basmati rice.
Smoked Brontosaurus Bones – These massive beef ribs are often referred to as Brontosaurus ribs because the large bones are around 6-8 inches long and specifically ribs 6, 7, and 8. Brontosaurus ribs are only cut from the plate primal, which is the belly. The serratus ventralis muscle only spans ribs 6, 7, and 8. Truly, it’s one of the best tasting on the entire cow. This area has a lot more marbling, resulting in more tender, beefy ribs. When smoked slow and low, the meat melts in your mouth like butter.

Since New Year’s Eve is Sunday evening and our staff really needs the Sunday Monday weekend after the Holiday celebrations, we’re celebrating New Year’s Eve EVE. Not to mention it’s awesome to get the party started early
